Hola amigos! It is FINALLY Friday. I don’ t know about you but this week went sooooo slow for me! Even with that it was one of the best weeks in a while and that is because on Wednesday I got to see Matchbox Twenty in concert. I have loved them since 1996. They remind me so much of my high school days! I hadn’t seen them in concert in about 16 years and they were just as good as I remember them being. Rob Thomas sounded EXACTLY the same. We got tickets in the Pepsi party deck thanks to my hubby and it was a GREAT night. I could have listened to them perform for 5 more hours!! Now let’s look at some of my favorites from this week….
Favorite Casual Outfit: I don’t often wear shorts but with this summer being crazy hot at times I have to give in. This outfit is perfect for summer! I just love a cute bralette and of course we all know how much I love Converse sneakers.
Favorite Appetizer: One of Luke and I’s favorite appetizers are the Southeastern Egg Rolls from Chili’s. You wouldn’t think picky me would enjoy them but the are delicious! I found this copycat recipe and I know what I am making for the next family get together!
Favorite Memory: After seeing MB20 on Wednesday I started getting a little nostalgic and then I saw this Buzzfeed post 47 Things You’ll Immediately Understand If You Were a Teen in the Late 90’s. Oh my goodness it brought me back!! 95% of the things on the list I remember. Man how things have changed! Makes me miss the old days and how simple they were. 🙂
Favorite Home DIY: We are not a house of handy people but I seem to save a lot of home DIY things that I would love to attempt. Our living room is pretty small and this DIY sofa table is a great option for a tiny living room. Perfect spot to keep my beverage and phone while I read on the couch.
Favorite Yum: I have a bucket list of places in the US that I want to eat at. The most recent addition is Pincho Factory in Miami for their plantain burgers. They have a few but the most decadent one is two patties with cheese, a block of fried cheese, a fried egg, potato sticks, and a cilantro sauce all between two fried plantains or tostones. This burger is indulgence at its finest. Who wants to take a road trip to MIA with me? Seeing this inspired me to find a plantain burger I can do at home. This Pineapple Avocado Plantain Burger is a good one but still nothing compared to this yumminess:
